Change shape/mask of an image without deforming the image
At the moment it's possible to change the size and position of an image which is (automatically) in an frame. But I can't change the frame? If I do this the image will deformed … If i double click to recharge the image aspect ratio its not possible exactly: there's no checkbox to change the aspect ratio to original

It looks like you dropped an image on canvas and then unlocked the aspect ratio of the image. You are correct that you are limited in what you can do with the "frame" in this case, and there is no automatic way to restore the original aspect ratio (except for undo).
Instead, try the following 2 ways to "mask" images (i.e. put image in a "frame").
1. Drop image on canvas, place a shape on top of image, select both, and Object > Mask with Shape. Selecting object allows your to edit it. Double-click and then select either the image or the mask to edit either one separately.
2. Create shape on canvas, drop image directly on shape. Selecting object allows your to edit the mask. Double-click to edit the image.

You can rotate image in case (1), but not (2).

You can do this in case (1), but not (2). Most likely, you want to change the image, so drop a new image on existing image.
Hope this helps,
